Begin by washing parsley thoroughly under cold running water to remove any dirt or grit from leaves. Shake off excess water from parsley bunches and pat leaves completely dry using clean kitchen towel or paper towels. Make sure parsley is thoroughly dried before moving to next step

Remove parsley leaves from thick woody stems while keeping tender stems attached to leaves. Use sharp chef's knife to finely chop parsley until pieces are very small and uniform in size, approximately 2-3mm. Transfer all chopped parsley to medium mixing bowl

garlic cloves very finely using sharp knife until pieces are tiny. Use flat side of knife blade to smash garlic and drag it against cutting board to create smooth paste consistency. Add prepared garlic paste to bowl containing chopped parsley

Add dried oregano, red pepper flakes, salt, and black pepper to bowl containing parsley and garlic. Mix all dry ingredients together with herbs until everything is evenly distributed throughout mixture

Pour red wine vinegar over herb mixture and stir everything together to combine thoroughly. Allow mixture to sit undisturbed for 2-3 minutes to let vinegar soften dried herbs and mellow raw garlic flavor

Slowly drizzle in olive oil while stirring mixture constantly using spoon or whisk. Continue stirring until oil is fully incorporated throughout and chimichurri achieves loose, pourable consistency. Add optional lemon juice if desired and stir thoroughly to combine all ingredients

Taste chimichurri and adjust seasoning by adding more salt, pepper, vinegar, or red pepper flakes as needed to achieve balanced flavor. Finished chimichurri should taste bright, herbaceous, tangy, and slightly spicy

Transfer finished chimichurri to clean glass jar or airtight container for storage. Allow sauce to sit at room temperature for at least 30 minutes before serving to let all flavors meld together properly. Chimichurri can be used immediately but will taste significantly better after this resting period
