Authentic guacamole is not a smooth puree; it is a textured mash of ripe avocados, brightened with lime and spiked with fresh chilies. Traditionally made in a molcajete (volcanic stone mortar), where the aromatics are ground into a paste first to release their oils before adding the avocado.

Mash half the onion, half the chili, half the cilantro, and half the salt in a molcajete (or mortar and pestle, or bowl with a fork). Grind until a green, fragrant paste forms. This releases the essential oils.
Cut the avocados in half, remove the pits, and scoop the flesh into the molcajete.
Mash the avocado into the paste using the pestle or fork. Leave it chunky; do not puree it smooth.
the remaining onion, chili, cilantro, and the tomato (if using).
Squeeze in the lime juice and mix gently. Taste and add more salt or lime if needed. Acidity cuts the richness.
Serve immediately with corn tortilla chips.
