Cook vermicelli noodles according to package, rinse with cold water, and drain well.

Boil pork and shrimp. Slice pork into thin strips. Halve shrimp lengthwise.

Prepare dipping sauce: Whisk peanut_butter, hoisin_sauce, and milk in a small saucepan over low heat until smooth. Cool.

Dip a sheet of rice_paper_wrappers in warm water for 1 second, then lay flat on damp towel.

Place a piece of lettuce_leaves, small amount of vermicelli_noodles, pork_belly, and fresh_mint on lower third.

Place 2 shrimp halves (orange side down) above the filling.

Fold sides in, fold bottom up over filling, add garlic_chives sticking out, and roll tightly up.

Repeat with remaining ingredients. Serve with peanut sauce.
