Spaghetti Aglio e Olio

The ultimate pantry pasta. Garlic, olive oil, chili flakes, and parsley come together to create a sauce that is greater than the sum of its parts. It's fast, cheap, and incredibly satisfying. The secret is to slowly toast the garlic to a pale gold without burning it, infusing the oil with sweet garlic flavor.

Boil Water: Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente (usually 1 minute less than package instructions).

Infuse Oil: While pasta cooks, combine cold olive oil and sliced garlic in a large cold skillet. Turn heat to medium-low. Cook slowly, stirring often, until garlic is pale golden (do not burn!).

Add Spice: Add red pepper flakes to the oil and cook for 30 seconds.

: Drain pasta, reserving pasta water. Add pasta directly to the skillet with the oil. Add a splash of pasta water. Toss vigorously over medium heat until the oil and water create a creamy emulsion that coats the noodles.

Finish: Turn off heat. Stir in chopped parsley. Serve immediately.
