Press firm_tofu to remove excess water; cut into thick slabs or strips.

Heat 1 tbsp vegetable_oil in a pan. Fry tofu until golden and crispy on all sides. Remove.

In the same pan, add remaining oil and sauté shiitake_mushrooms and garlic_cloves until browned.

Add soy_sauce and hoisin_sauce to the pan, toss mushrooms, and return tofu to coat in glaze.

Slice the baguettes open-lengthwise and slightly hollow out the center to make room for the fillings.

Toast baguettes by placing them open-faced under a broiler for 2 minutes until lightly golden.

Spread a thin layer of vegan_mayonnaise mixed with a dash of soy sauce on both halves of the toasted baguettes.

Assemble sandwiches with tofu-mushroom mix, topped with pickled_daikon_carrot, cilantro, sliced cucumber, jalapeno, and serve with lime wedges.
